Fish with Marinated Onions Recipe
Ingredients
| 4 firm white fish fillets | ||
| 1/2 cup/60 g/2 oz flour | ||
| Ground cumin | 1 Tablespoon | |
| 1 tablespoon mild chilli powder | ||
| Ground coriander | 2 Teaspoon | |
| Vegetable oil | 2 Tablespoon | |
| Lime marinated onions | ||
| White onions | 3 , thinly sliced | |
| Coriander leaves | 3 Tablespoon | |
| Sugar | 1 Tablespoon | |
| 1/2 cup/125 ml/4 fl oz lime juice | ||
Directions
1. To make marinated onions, place onions, coriander (cilanto) leaves, sugar and lime juice in a bowl, cover and marinate at room temperature for at least 1 hour.
2. Place fish fillets on absorbent kitchen paper and pat dry. Place flour, cumin, chilli powder and ground coriander in a plastic food bag and toss to combine. Add fish and toss to coat with spice mixture, then shake off excess.
3. Heat oil in a frying pan over a medium heat, add fish and cook for 1-2 minutes each side or until flesh flakes when tested with a fork. Serve with marinated onions.
