Directions
MAKING
1 Rinse fish under cold water; drain well and pat dry with paper towels.
2 Sprinkle cavity with salt and set aside.
3 Combine bread crumbs, capers, green onion, and parsley.
4 Blend egg with 2 tablespoons half-and-half and pour over bread crumb mixture.
5 Mix until moistened, adding additional half-and-half if necessary.
6 Lightly pile stuffing into the fish.
7 Fasten with wooden picks or secure with string.
8 Place in an 11 x 7-inch baking dish. Cover with waxed paper.
9 Cook fish for 8 to 10 minutes, or until fish flakes when tested with a fork.
10 Rotate dish one-quarter turn halfway through the cooking time.
11 Allow to stand for 2 minutes after cooking before serving.
