Ingredients

 Frozen vegetable mix2 Cup (16 tbs)
 4 (6 ounce) frozen cod or halibut fillets
 Herb seasoning2 Teaspoon, divided
 Extra virgin olive oil4 Tablespoon, divided

Directions

Preheat oven to 350 degrees.
Tear off 8 squares of parchment paper.
Arrange on a flat surface.
Place 1/2 cup frozen vegetables in the center of each square.
Place fish on vegetables.
Season with 1/2 teaspoon Kosher salt, 1 /4 teaspoon pepper, 1 /2 teaspoon of your favorite herb seasoning.
Drizzle with 1 tablespoon extra virgin olive oil.
Top the fish and vegetables with the remaining 4 squares of parchment.
Fold over the edges several times to seal.
Packets can be placed in resealable freezer bags and frozen until ready to cook, for up to 3 months.
Remove the frozen packets from freezer bag and place in a single layer on a baking sheet.
Bake for 25 minutes.
Remove from oven.
Transfer each fish packet to a plate; carefully open with a paring knife to allow steam to escape.
