Fish-Stuffed Potato Boats Recipe

Ingredients
| 4 potatoes (about 3 ounces each ) | ||
| 16 ounces cooked fish | ||
| 4 tablespoons hot skim milk | ||
| 1 teaspoon onion salt | ||
| Paprika | ||
Directions
Bake scrubbed, mature potatoes at 425° F. for 40-50 minutes.
When they are soft, cut in half lengthwise, remove insides, leaving skin intact.
Mash potato pulp with fish, hot milk and onion salt.
Divide mixture equally into 8 potato halves, piling high in center.
Sprinkle paprika on top.
Set aside till ready to use, then bake on shallow pan at 400° F. until hot and brown on top.
Allow 2 "boats" per serving.
