Fish Stuffed Bacon Rolls Recipe
Ingredients
| 8 ounces cooked flounder, mahimahi, or monkfish | ||
| 1/2. cup shredded peeled apple | ||
| Onion | 1 Tablespoon, finley chopped | |
| Snipped parsley | 1 Tablespoon | |
| Curry powder | 1/4 Teaspoon | |
| Salt | 1/8 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Milk | 1 Tablespoon | |
| Egg yolk | 1 , beaten | |
| 1/4 cup fine dry seasoned bread crumbs | ||
| 12 slices bacon, halved crosswise | ||
Directions
Flake or finely chop the fish.
For stuffing, in a medium mixing bowl combine fish, apple, onion, parsley, curry powder, salt, and pepper.
Add milk and egg yolk, then mix till well combined.
Add bread crumbs, and then mix well.
For bacon rolls, partially cook the bacon.
Drain bacon on paper towels.
Place 1 rounded teaspoon of stuffing onto an end of each piece of bacon.
Roll bacon around stuffing.
Secure with wooden toothpicks.
If desired, cover and chill.
To bake, place bacon rolls on a wire rack in a 15x10 x 1-inch baking pan.
Bake in a 375° oven for 15 to 18 minutes or till the bacon is crisp.
