 Sliced onion1 Cup (16 tbs)

 Fish bones and trimmings2 Pound (All From Lean Fish)
 Dry white wine1 Cup (16 tbs)
 Bouquet garni1
 White pepper/ salt To Taste

Directions

Put all ingredients and 1 quart of cold water into a kettle or stock pot and bring to a boil.
Skim.
Reduce heat, half-cover the pot, and simmer 30 minutes.
Strain through a fine sieve.
