Fish Stock Recipe

Ingredients
8 pounds fish trimmings
3 medium-sized onions, peeled and chopped
1 carrot, trimmed, scrubbed, and sliced
10 fresh parsley sprigs
1 bay leaf
1 teaspoon thyme
2 teaspoons salt
2 tablespoons fresh lemon juice
3 cups dry white wine
4 quarts cold water
Directions
Place fish trimmings in a large soup or stock pot.
Add the remaining ingredients.
Over high heat bring stock almost to a boil, skimming any foam.
Lower heat to medium and simmer, uncovered, for 30 minutes, continuing to remove foam as it forms.
After 30 minutes, strain the stock through several layers of cheesecloth, reserving only the stock.
Cool, cover, and refrigerate.
Add the remaining ingredients.
