Ingredients

 
Fresh fish trimmings - 2-2 1/2 Ib , heads, bones, etc.
 
Large shallots - 3 or
 
Medium sized mild onion - 1
 
Small carrot - 1
 
Celery stalks - 2
 
Sprigs thyme - 2
 
Bay leaf - 1
 
Dry white wine - 2 cups
 
White peppercorns - 5
 
Black peppercorns - 5
 
Salt

Directions

GETTING READY
1 Rinse the fish trimmings well under running cold water.
2 Break or cut up any large pieces.
3 Rinse a cheesecloth in coldwater and wring out.
4 Line a sieve or a colander with the cheesecloth.

MAKING
5 In a large pot, place the fish trimmings with 1 1/2 quarts cold water and 1/2 tsp salt.
6 Bring slowly to a boil over gentle heat.
7 Skim off any scum as it rises to the surface.
8 Meanwhile, peel the shallots, and cut into thin rings.
9 Slice the peeled carrot and the celery finely.
10 Add these and the remaining ingredients to the water and fish.
11 Simmer uncovered for 30 minutes.
12 Slowly pour the fish stock through the cheesecloth into the prepared sieve or colander.
13 Correct the seasoning if needed.
14 Allow to cool at room temperature.
15 Transfer to an airtight container and refrigerate.

SERVING
16 Serve as desired.
