Ingredients

 500g fish bones from white fleshed fish
 Onion1 , sliced
 Celery stick1 , sliced
 Parsley stalks6
 Mushrooms60 Gram, chopped
 White wine500 Milliliter
 Water3 Liter

Directions

Place all ingredients in a saucepan, bring to the boil.
Simmer, uncovered, for 25 minutes.
Strain.
Cool, cover and refrigerate to allow any fat to rise to surface.
Remove fat.
