Fish Stew Recipe

Ingredients
3 pounds fish fillets, skinned
5 medium tomatoes, peeled and chopped
3 carrots, chopped
1 large onion, thinly sliced
2 teaspoons salt
1/4 teaspoon freshly ground pepper
2 garlic cloves, minced
1 teaspoon fennel seed, crushed
1 tablespoon minced orange peel
1 cup dry white wine
1 quart fish stock
Directions
1. Cut fish into 1 1/2 inch pieces. Set aside.
2. Simmer tomatoes, carrots, onion, salt, pepper, garlic, fennel, and orange peel in a mixture of wine and stock 15 minutes. Add fish to stock mixture; simmer covered until fish is tender and flakes with a fork
