2 teaspoons vegetable oil
1 cup thin onion slices
1 cup julienned carrot strips
1/2 teaspoon dry mustard
1/4 teaspoon each dried basil leaves, crushed, and dried dill weed
2 fresh California Bartlett pears, cored and quartered
1 1/2 pounds firm fish fillets, such as sea bass, haddock or salmon
2 tomatoes, sliced
1 lemon, thinly sliced
Directions
Heat oil in large nonstick skillet over medium heat until hot.
Add onion and carrots; stir to mix well.
Cover and cook 5 to 10 minutes.
Mix mustard, basil and dill weed in small bowl; add pears.
Toss to coat.
Add fish, pear mixture, tomatoes and lemon to skillet.
Cover; cook 10 minutes or until fish flakes easily with fork.
