Fish Soup Recipe
Ingredients
| 15ml / 1 tbsp olive oil | ||
| Onion | 1 , chopped | |
| Garlic | 1 Clove (5gm), crushed | |
| Fennel bulb | 1/2 , chopped | |
| 2 large or 4 small tomatoes, skinned and chopped | ||
| 1 kg / 2 lb mixed white fish, cleaned and skinned | ||
| 10 ml / 2 tsp turmeric | ||
| Boiling water | 2 1/2 Cup (16 tbs) | |
| Ground black pepper | 1 To taste | |
| Parmesan cheese | ||
| Salt | To Taste | |
Directions
Put the oil in a large pot and cook for 30 seconds. Stir in the onion, garlic and fennel, cover and cook for 5 minutes.
Add the tomatoes and fish, stir in the turmeric, then pour over the water or stock (broth). Cover and cook for 8—10 minutes, until the fish is done.
Season to taste and serve with plenty of Parmesan cheese.
