Yummy Fish Soup Recipe
Ingredients
2 pounds fresh or frozen cod or halibut
1/2 cup olive oil
2 cloves garlic, mashed or minced
1/2 cup finely chopped parsley
1/2 cup sliced green olives(2 oz. jar)
1 cup canned or fresh tomatoes
2 cups water
1/4 cup dry white table wine
Directions
Cut fish into 2-inch-square pieces.
In a covered saucepan, combine the oil, garlic, parsley, sliced olives, and tomatoes.
Cook over medium heat 5 minutes.
Add the fish and continue cooking 5 minutes, stirring frequently to prevent sticking.
Add water, cover saucepan, and simmer until the fish can be flaked with a fork, about 10 minutes.
Add wine before serving.
