Fish Puff Recipe

Directions
Prepare flaky pastry as follows.
Make plain short pastry using flour, salt, margarine and cold water.
Roll out to 1 cm (1/2 in) thickness.
Dot butter on top half of pastry, fold up bottom and turn in sides.
Repeat folding and rolling 3 more times.
Chill for half an hour before using.
Roll out pastry till 24 cm (10 in) wide and 30 cm (12 in) long.
Place fillets in the middle leaving about 4 cm (1 1/2 in) at each end and sufficient pastry at the sides to fold over and meet in the middle.
Mix the butter with chopped parsley and put in dots on top of fish.
Season with salt and pepper.
Fold over sides and ends and pinch together.
Brush the top with beaten egg yolk.
Bake in hot oven for 15 minutes then at moderate heat for 15-20 minutes till golden brown and crisp.
Serve hot or cold with lemon wedges and a salad.
