Ingredients
1/4 lb (115 g) sole
1/4 lb (115 g) angler
1/4 lb (115 g) haddock
1/4 Cup (60 ml) turnip
1/4 Cup (60 ml) celery
1/4 Cup (60 ml) leeks
1/4 Cup (60 ml) potatoes
1/4 Cup (60 ml) carrots
1/4 Cup (60 ml) butter
1 bay leaf
Pinch of thyme
Juice of 1/2 lemon
2 tbsp (30 ml) flour
2 1/2 Cups (625 ml) water
2 tbsp (30 ml) tomato paste
Salt and pepper
4 cabbage leaves, blanched
Directions
– Cut fish into strips and dice vegetables.
– In a stove-top casserole, melt butter and saute the vegetables over low heat. Cover and cook for 6 minutes more.
– Add bay leaf, thyme, lemon juice, and flour and cook for 4 minutes, stirring constantly. Add water, tomato paste and the fish and let mixture thicken, then reduce heat to low and cook for 15 minutes. Season with salt and pepper.
– Spread cabbage leaves in a serving dish and spoon fish in middle.

– Add bay leaf, thyme, lemon juice, and flour and cook for 4 minutes, stirring constantly. Add water, tomato paste and the fish and let mixture thicken, then reduce heat to low and cook for 15 minutes. Season with salt and pepper.
– Spread cabbage leaves in a serving dish and spoon fish in middle.
