Fish Lover's Kebabs Recipe
Ingredients
2 lb (900 g) halibut steaks, 3/4 in (2 cm) thick and in 1 in (2.5 cm) pieces
1 onion, finely chopped
4 tbsp (60 ml) oil
2 tbsp (30 ml) lime juice
1/4 tsp (1 ml) Tabasco sauce
1/4 cup (50 ml) dry white wine
6 green onions, in 1 in (2.5 cm) sticks
7 oz (199 ml) can water chestnuts, drained
12 lime slices
12 apple wedges with skin
Directions
Marinate halibut 15 minutes in chopped onion, oil, lime juice, Tabasco sauce and wine.
Drain and reserve marinade.
Alternate fish, green onions, water chestnuts, lime slices and apple wedges on skewers.
Place on ovenproof platter.
Broil 8 to 10 minutes in oven 6 in from top element.
Turn skewers over once and baste occasionally with marinade.
