Fish In Wine Sauce Recipe

In my personal opinion, this Fish In Wine Sauce stands Numero Uno in the world and I cannot contain my urge to offer this to you. Ingredients

 
2 tablespoons butter
 
1/4 cup all purpose flour
 
Salt and pepper
 
2/3 cup white wine
 
2/3 cup chicken bouillon
 
1/2 cup mushrooms, thinly sliced
 
3/4 lb white fish, skinned and filleted
 
1/4 cup shelled shrimp
 
1 tomato, sliced parsley sprigs to garnish

Directions

1 Place the butter in a 1 litre/1 3/4 pint (4 1/4 cup) jug and microwave on full power for 1 minute.
2 Stir in the flour and salt and pepper to taste. Gradually add the wine and the stock (bouillon), stirring until the ingredients are well mixed. Microwave on full power for 3 1/2 minutes.
3 Beat with a balloon whisk until sauce is smooth and glossy.
4 Stir in the mushrooms and flaked fish and prawns (shrimp). Stir well.
5 Divide the mixture between individual dishes, or place in a 900ml/1 1/2 pint (3 3/4 cup) casserole dish. Garnish with tomato slices. Cover with plastic wrap, and pierce.
6 Microwave on power 5 for 6 minutes, then garnish with parsley before serving.
