2 tablespoons olive or vegetable oil
1 onion, finely chopped
1 clove garlic, finely chopped
1 1/2 cups peeled, chopped ripe tomatoes
1 tablespoon chopped parsley

1 fresh hot chili pepper, seeded and chopped
1/4 teaspoon dried oregano
1 pound boneless firm white fish, such as cod, halibut, or striped bass
Directions
1. Heat the oil in a saucepan and saute the onion and garlic until transparent and tender but not browned.
2. Add the tomatoes, parsley, salt, chili pepper, and oregano. Bring to a boil and simmer for 20 minutes.
3. Cut the fish into 2-inch squares and add to the sauce. Cover and simmer for 8 minutes, or until the fish flakes easily.
