Fish In Smoker Cooker Recipe
Ingredients
| 1 layer of fish on screen (fillets or whole fish) | ||
| Seasonings That Go in the Water Pan | ||
| Dry white wine | 1 Cup (16 tbs) | |
| Liquid smoke | 1 Tablespoon | |
| 1 lemon, cut up | ||
| Dried parsley | 1 Tablespoon | |
| Salt | To Taste | |
| Red cayenne pepper | 1 To taste | |
| Water | ||
| Charcoal—not too much—about 3 lbs. | ||
| Hickory or pecan wood—2 or 3 pieces | ||
Directions
Salt and pepper fish.
Soak wood in water.
Light charcoal and let burn down, then place wood on charcoal.
Put water pan with wine, liquid smoke, parsley, and lemon in smoker cooker.
Fill pan with water, being careful not to splash on fire.
Place fish on greased screen over grill.
Close smoker cooker and smoke for about 2 hours.
Check to see if done before the 2 hours are up.
