Classic Fish Fillets Florentine Recipe
Ingredients
| 4 6- to 8-ounce sole fillets {or other thin fish fillets) | ||
| Dry white wine | 1/2 Cup (16 tbs) | |
| 2 10-ounce packages frozen chopped spinach, thawed and well drained | ||
| Ground pepper | 1 To taste | |
| 1 10 3/4 ounce can cream of shrimp soup, undiluted | ||
| Butter | 4 Tablespoon | |
| Freshly grated Parmesan cheese | ||
| Paprika | ||
| Salt | To Taste | |
Directions
Preheat oven to 350°F.
Butter an 8-inch square baking dish.
Poach fish in wine 4 to 5 minutes; drain.
Spread spinach evenly in dish and season with salt and pepper to taste.
Arrange fish over spinach and top with soup.
Dot with butter and sprinkle with cheese and paprika.
Bake 20 minutes.
