Fish En Casserole Recipe

Ingredients
2 lbs. haddock or cod, in one piece
2 cups sprouted mung beans
1/2 cup chopped parsley
1/4 cup chopped chives
1 tbsp. fresh snipped dill
4 tbsp. butter or margarine
Juice of 1/2 lemon or 1 lime
Salt to taste
Freshly-ground pepper
Directions
Preheat oven to 400°.
Grease bottom of a flat baking dish large enough to hold the fish in one layer.
Mix together the mung beans, parsley, chives and dill.
Spread over bottom of baking dish.
Place fish on top.
Sprinkle with salt, pepper and lemon or lime juice.
Dot with butter.
Place in oven, uncovered, and bake for 20-25 minutes until fish flakes easily when fork is inserted into thickest part.
