 Fish trimmings and bones2 Kilogram
 Diced onion1
 Diced carrots3 Large
 Diced celery stalks3
 Bouquet garni1
 Water3 Large


Place the fish trimmings and bones into a large kettle or Dutch oven.
Add the vegetables, bouquet and water.
Heat gently without boiling.
Simmer for 2 hours.
While stock simmers, remove any scum which may rise to the top.
Strain through a fine sieve then a second time through a cheesecloth.
Use as required.
