Ingredients

 
3 to 5 lb. fish (whole and cleaned)
 
1 tsp. salt
 
1 tbs. onion, minced
 
1 tsp. parsley, minced
 
1 tbs. bacon drippings
 
1/2 tsp. salt
 
Dash of pepper
 
1 cup small bread cubes
 
1/4 cup milk or broth
 
3 slices bacon
 
Ti leaves

Directions

Rub the inside of fish with salt.
Let stand 5 minutes.
Blend together onion, parsley, bacon drippings, seasonings, bread cubes and liquid.
Lightly stuff fish with mixture.
Sew fish together with string or secure with skewers.
Arrange slices of bacon over the top.
Wrap in ti leaves and place in oiled baking pan.
Bake at 325°F., for 20 minutes per pound.
