Baked Fish Recipe Video

With thousands of miles of coastline, it is not surprising that Greeks have developed numerous delicious ways of preparing fish. In this video, Eva show us how to prepare fish baked in the oven with onions, carrots, garlic, lemon, parsley and olive oil. We love this recipe for its simplicity and nutritional value.

Ingredients

 Herring/Any other fish6 Fillets
 Onion2 Medium, chopped finely
 Garlic6 Clove (30 gm)
 Carrots2 Medium, chopped
 Potatoes4 Small, wedged
 Parsley1⁄4 Cup (4 tbs), chopped
 Olive oil1⁄2 Cup (8 tbs)
 Salt1⁄2 Teaspoon
 Pepper1⁄2 Teaspoon
 Lemon juice1⁄2 Medium
 Wine1⁄4 Cup (4 tbs)
 Water2 Cup (32 tbs)

Directions

GETTING READY
1) Clean the fish and season it with salt, pepper, and a few drops of lemon juice. Keep it in fridge.
2) Preheat the oven to 350 degrees.
3) Grease a large pan with olive oil and place the fillets.

MAKING
4) Put onion on the fish. Place garlic, carrots, and potatoes.
5) Sprinkle salt, pepper, and fresh parsley.
6) Squeeze lemon juice; pour olive oil, wine, and water to the pan.
7) Put the pan in oven and cook it at 350 degrees.
8) After an hour take the pan out, turn the potatoes.
9) Roast for another 30 minutes.

Serving
10) Serve your baked fish with a glass of wine.

I bought a fish called Orpa. A kind of tuna I guess. I found this video online and followed it pretty closely. It was FABULOUS! I only had red wine, and used mushrooms instead of potatoes. The fish was tender and broth great!
