 Mackerel  1 pound
 Soy sauce1/4 Cup (16 tbs)
 Ginger2 Teaspoon, grated
 Cornstarch3 Tablespoon
 Oil8 Tablespoon
 Onions3 Cup (16 tbs), sliced
 Green peas1/2 Cup (16 tbs)
 Saki or Sherry- 2 tablespoons
 Sugar2 Tablespoon
 Ac'cent- 1/4 teaspoon
 Scallions- 1 tablespoon, cut in juliennes

Directions

GETTING READY
1) Cut the fish in 1/2-inch squares.
2) In a bowl, make a mixture of soy sauce and ginger, soak the fish in it for 15 minutes.

MAKING
3) Drain the fish, reserving the marinade.
4) Roll the fish in cornstarch.
5) In a skillet, heat oil and brow the fish in it on both the sides. Remove the fish.

FINALIZING
6) In a pan, heat remaining oil and sauté onions for 3 minutes.
7) Stir in the peas, sake or sherry, sugar, Ac'cent, and reserved marinade and the fish.
8) Simmer for 5 minutes.

SERVING
9) Serve hot, garnished with scallions.
