Fish and Batter Recipe
Ingredients
| Margarine | 1/4 Cup (16 tbs) | |
| 4 fillets cod, haddock, or flounder | ||
| Juice of 1/2 lemon | ||
| Flour | 1 Cup (16 tbs) | |
| Salt | 1/4 Teaspoon | |
| Egg | 1 | |
| Milk or water | 1 Cup (16 tbs) | |
| Grated cheese | 1/2 Cup (16 tbs) | |
Directions
Preheat oven to 435°F.
Grease deep ovenproof dish or casserole with some of margarine.
Wash and dry fish; arrange in dish, skin-side-downward.
Melt remaining; pour over fish.
Add lemon juice and seasoning.
Cover; bake 15 minutes.
While fish is cooking, make batter.
Sift flour and salt into bowl.
Make a well in center; drop in egg.
Add half of liquid; stir until smooth.
Add rest of liquid.
When quite smooth, beat very thoroughly.
Add cheese; beat another minute.
When fish has baked 15 minutes, pour batter over it.
Bake 20 minutes longer, or until batter is well risen and brown.
