|Chopped fresh mushrooms||2 Ounce (1/2 Cup)|

|White pepper||1⁄8 Teaspoon|

|Fish stock||1 Cup (16 tbs)|
|Beaten egg yolks||2|
|Fish||1 Pound, cooked and broken into small pieces|
|Snipped parsley||2 Tablespoon|
|Frozen patty shells||6 , baked|

Blend in flour, salt, and white pepper.
Add milk and fish stock all at once.
Cook quickly, stirring constantly, till mixture thickens and bubbles.
Remove from heat.
Gradually blend a moderate amount of milk mixture into egg yolks.
Return mixture to saucepan and cook 2 minutes more, stirring constantly.
Fold in cooked fish and snipped parsley.
Cover and cook over low heat till heated through.
