Fish A La Bretonne Recipe
Ingredients
4 small fish
Pinch of pepper
Flour to coat
2 oz. butter
1 tsp. salt
1/2 lemon
Directions
Slit the belly and flatten round fish, after removing heads and fins.
Dry and coat in the flour and seasoning.
Melt the butter in a casserole and when very hot add the fish, skin side up.
Cook for a few minutes.
Turn the fish over, and then put the lid on the casserole and cook until the fish is tender.
Sprinkle with lemon juice before serving.
