Finnish Carrot Rice Muffins. Recipe
Ingredients
11/2 Cups All-Purpose Flour
1 Tbsp. Brown Sugar
1/2 Tsp. Salt
2 Tsp. Baking Powder
1 Cup Shredded Carrot
1/2 Cup Cooked Rice
2 Eggs, Beaten
1 Cup Milk
1/2 Tsp. Butter Flavoring
2 Tbsp. Butter, Melted
1/2 Cup Wheat Germ
Directions
Mix together flour, sugar, salt and baking powder.
Add shredded carrots and rice and blend together well.
In another bowl, whisk eggs with milk, butter flavoring and melted butter.
Make a well in the dry ingredients and add liquid ingredients, stirring quickly.
Spoon into greased muffin cups and sprinkle tops with wheat germ.
Bake until lightly brown and tester comes out clean.
Bake at 400 degrees 20-25 minutes
