Finnish Cardamom Cake Recipe
I am known among my circle of friends for this wonderful Finnish Cardamom Cake! I have been told that the picnic treat spread simply will never be complete without these yummy cakes! Try this Finnish Cardamom Cake recipe for yourself!
Ingredients
2 eggs, beaten
2 cups sour cream
2 cups castor sugar
3 drops almond essence
3 cups flour
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground cardamom
Directions
Place eggs, sour cream, sugar and almond essence in a large bowl and mix until combined. Sift flour with bicarbonate of soda, salt and spices and add gradually to egg mixture, beating until batter is smooth. Pour into a greased 23cm gugelhopf, bundt or ring tin that has been dusted with sugar. Bake in a moderate oven 180C (350F) for IV hours or until a skewer inserted into the centre comes out clean. Leave in tin for 10 minutes before turning out to cool on a wire rack.
