Finnish Potato Rye Recipe

Ingredients
1 tablespoon active dry yeast
1/2 cup warm potato water (105°-115°F)
2-2 1/2 cups white flour
1 cup rye flour
1 cup warm mashed potatoes
1/2 cup light molasses
1/2 teaspoon salt
2 teaspoons caraway seeds
Glaze (optional)
2 teaspoons sugar
2 tablespoons warm water
Directions
1 Dissolve yeast in potato water. Set aside for 5 minutes.
2 Combine 1 1/2 cups white flour, rye flour, potatoes, molasses, salt, caraway seeds, and yeast mixture. Mix thoroughly.
3 Add enough remaining white flour to make a soft dough. Knead on lightly floured surface until smooth€”about 10 minutes.
4 Place in greased bowl, turning to coat top. Cover; let rise in warm place until double€”about 1 hour.
5 Punch down dough. Shape loaf. Place on greased 9 x 5-inch loaf pan.
6 Cover; let rise in warm place until double€”about 40 minutes.
7 Bake in a preheated 350°F oven for 45 minutes or until done. Make glaze and brush on loaf. Cool on wire rack.
