Finnish Chestnut Fingers Recipe
Ingredients
6 tablespoons butter, softened
1/4 cup sugar
1 egg yolk
1/2 cup chestnut puree or canned chestnuts, drained and pureed
1/2 teaspoon vanilla
1 cup all-purpose flour
1/4 teaspoon ground cinnamon
3 1-ounce squares semisweet chocolate or 1/2 cup semi-sweet chocolate pieces, melted
Directions
Cream butter and 1/4 cup sugar.
Add egg yolk; beat well.
Beat in puree and vanilla.
Stir together flour, cinnamon, and 1/4 teaspoon salt: stir into creamed mixture.
Using a scant tablespoon dough for each cookie, roll into 2 1/2-inch fingers.
Place on lightly greased cookie sheet.
Sprinkle with additional sugar.
Bake at 350° till slightly browned, about 20 minutes.
Remove from pan; cool on rack.
Dip one end of each cookie in melted chocolate; place on waxed paper.
Chill till set.
