Finnish Cardamom Bread Recipe
|Dry yeast||3 Tablespoon (3 Package)|
|Warm water||1⁄2 Cup (8 tbs)|
|Milk||1⁄2 Cup (8 tbs), scalded|
|Salt||1 1⁄2 Teaspoon|
|Sugar||5⁄8 Cup (10 tbs)|
|Finely ground cardamom||2 Teaspoon|
|Eggs||3 Large, beaten|
|Flour||5 Cup (80 tbs), sifted|

Mix the milk, butter, salt and 1/2 cup sugar in a bowl and cool until lukewarm.
Add the yeast, cardamom and eggs and mix lightly.
Add enough flour to make a stiff dough and knead on a floured surface for 5 to 8 minutes.
Place in a greased bowl and cover.
Let rise in a warm place for 45 minutes.
Punch down and divide into 3 parts.
Roll each part into a long roll and place rolls close together on a greased cookie sheet.
Braid the rolls.
Beat the egg white with remaining sugar until stiff and spread on the braid.
Cover and let rise for 45 to 50 minutes.
Bake in 375-degree oven for about 40 minutes or until toothpick inserted in center comes out clean.
