Gather into ball; knead lightly until smooth and dough holds together.
Divide dough into 6 portions.
On lightly floured surface, roll each portion into 10-inch (25 cm) long log; flatten with knife to 1/2-inch (1 cm) thickness.
Brush with egg; sprinkle with coarse sugar and almonds.
Cut on diagonal into 1-inch (2.5 cm) wide slices to form diamond shapes.
Bake on greased or parchment paper-lined baking sheets in 325°F (160°C) oven for 1.0 to 12 minutes or until golden brown on edges.
Let cool on pans on rack for 5 minutes; remove to racks to let cool completely.
