Finnan Haddock Recipe

Ingredients
1 lb (500 g) haddock, smoked
2 tbsp (30 mL) butter
1/4 tsp (1 mL) pepper
1 cup (250 mL) milk or light cream
1 tbsp (15 mL) cornstarch
Directions
Remove all skin from the fish, if necessary, and cut into serving-size or bite-size pieces.
Pour butter in a 9-inch (23 cm) microwave-safe pie plate and melt 2 minutes at HIGH.
Add the fish, sprinkle with the pepper, cover.
Microwave at MEDIUM-HIGH 3 minutes.
Mix the milk or cream with the cornstarch.
Pour over the fish.
Simmer at MEDIUM-LOW 5 minutes.
Stir and serve as soon as ready.
The traditional garnish is boiled peeled potatoes and finely chopped parsley.
