Finnan Haddie With Dill Recipe
Ingredients
| Finnan haddie | 1 pound | |
| 2 1/4 cups milk, or more if needed | ||
| Butter | 4 Tablespoon | |
| Flour | 4 Tablespoon | |
| 2 tablespoons chopped fresh dill or one tablespoon dried dill | ||
| Sprigs of dill or parsley | ||
Directions
Place the finnan haddie in a saucepan and cover with milk.
Bring to a boil and simmer, covered, twenty to twenty five minutes.
Drain and reserve two cups of the milk.
Tear the fish into bite-size pieces and reserve.
Heat the butter and blend in the flour, stirring with a wire whisk.
When the mixture is well blended, add the reserved milk, stirring vigorously with the whisk.
When the sauce is thickened and smooth, add the finnan haddie.
