Finnan Haddock Pudding Recipe

Ingredients

 
1 lb (500 g) finnan haddock
 
2 slices of bacon, diced
 
1 tbsp (15 mL) butter
 
2 cups (500 mL) mashed potatoes
 
Pepper to taste
 
Juice and grated rind of 1/2 a lemon
 
1 small onion, minced
 
1/2 tsp (2 mL) celery salt
 
1/4 cup (60 mL) parsley, minced
 
1/2 tsp (2 mL) savory
 
3 tbsp (50 mL) butter
 
3 eggs
 
Paprika

Directions

€¢ Place the fish in a 9-inch (23 cm) microwave-safe pie plate.
€¢ Sprinkle bacon on top and add just enough water to cover bottom of dish. Cover and microwave 10 minutes at MEDIUM.
€¢ Remove fish to a hot plate and rub top of fish with the 1 tablespoon (15 mL) butter. Cool.
€¢ When fish is cool, flake and add to the mashed potatoes.
€¢ Add pepper, lemon juice and rind, onion, celery salt, parsley and savory. Beat together until thoroughly mixed.
€¢ Melt the 3 tablespoons (50 mL) butter 1 minute at HIGH. Add the fish mixture.
€¢ Separate the eggs, beat the yolks until light. Stir into fish and potato mixture.
€¢ Beat the egg whites and fold gently into the mixture.
€¢ Butter a 4-cup (1 L) microwave-safe casserole and pour in the mixture.
€¢ Sprinkle top generously with paprika.
€¢ Bake 12 to 14 minutes at MEDIUM.
