Herb & Cheese Filling Recipe
Ingredients
| 2 pork link sausages | ||
| Onion | 1/4 Cup (16 tbs), chopped | |
| Olive oil | 1 Tablespoon | |
| 1 egg, slightly beaten | ||
| 1/2 cup spinach, cooked and well-drained | ||
| 1/2 cup fine soft bread crumbs | ||
| Salt | 1/4 Teaspoon | |
| Rosemary | 1/8 Teaspoon | |
| Thyme | 1/8 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Parmesan cheese | 2 Tablespoon, grated | |
Directions
Remove casing from sausages and break up meat.
Add onion and saute in oil.
Add egg, spinach, bread crumbs, salt, rosemary, thyme, pepper and Parmesan cheese.
Blend well.
Divide into 8 portions and roll each in a crepe.
Place seam-side down in a buttered baking dish.
Tightly cover.
Bake at 350° for 20-25 minutes.
