Fillets Of Sole In Wine Sauce Recipe
Ingredients
1 tsp. parsley
1 tsp. chopped green onion
3 fresh mushrooms, chopped
1 c. white wine
8 med. fillets of sole
1 stalk celery, chopped
2 tbsp. olive oil
1 bay leaf
1/2c. consomme
Grated Parmesan cheese
Directions
Brown parsley, onion, mushrooms and celery lightly in hot olive oil in saucepan.
Add bay leaf, consomme and wine.
Bring to a boil.
Simmer for 10 minutes.
Place fillets in greased casserole.
Cook sauce until reduced to 1 cup liquid; pour over fillets.
Sprinkle with cheese.
Bake at 450 degrees for 10 minutes.
Garnish with parsley and lemon slices if desired.
