 Flounder fillets8
 Salt To Taste
 Paprika1 Teaspoon
 White wine1⁄3 Cup (5.33 tbs)
 Fish stock2 1⁄2 Cup (40 tbs)
 Boiled lobster1 (Shell And Meat)
 Littleneck clams/Small cooked shrimp18
 Butter3 Tablespoon, melted
 Flour3 Tablespoon
 Pepper To Taste
 Grated parmesan cheese1⁄4 Cup (4 tbs)


1. Place fillets in buttered baking dish, sprinkle with salt and paprika and add wine.
2. Cover loosely with foil and bake at 350°F. 15 minutes.
3. Combine fish stock, cracked shell of lobster and 6 clams. Simmer until liquid is reduced to 1 cup.
4. Blend butter and flour, add strained fish stock and 1/4 cup liquid from fillets, stir and cook just until thickened. Season with salt and pepper.
5. Arrange fillets on heatproof platter, pour strained sauce on top and garnish with sliced lobster meat and remaining clams.
6. Sprinkle with cheese and bake at 350°F. until cheese is melted and fillets are hot.
