Fillets Of Sole Catherine Recipe
Ingredients
2 1/2 pounds fillet of sole
1/2 lemon
2 shallots with greens, minced
2 fennel leaves, chopped
Salt and pepper to taste
White sauce
1/2 cup Malaga grapes, peeled and seeded
1/2 cup dry white wine or cider
Directions
Wipe fillets clean.
Rub with lemon, salt and pepper on all sides.
Place in clay baker.
Cover with shallots, fennel.
Moisten with wine or cider.
Close and bake.
