Trim a thick piece of fillet steak into rounds about 1/2" thick and 4" across (4 to 5 oz).
Brown under a hot grill, turning only once.
(Avoid pricking them with a fork.) Then put them in a hot dish, and season with salt and—very sparingly—with pepper.
