Ingredients
3 oz. fillet of veal in one piece
1/2 small beaten egg
1/2 teaspoon soy sauce
Pinch salt
Few shakes pepper
1 tablespoon peanut oil
2 tablespoons diced (not too small) canned bamboo shoots
2 tablespooons thinly sliced unopened button mushrooms
Pinch Ve-Tsin
3-4 tablespoons hot chicken stock
1/2 teaspoon cornflour
1 dessertspoon water
Directions
Cut the veal diagonally into very thin slices and work the egg, soy sauce, salt and pepper into them.
Heat the oil in a frying-pan.
Add the veal and fry it for 2 minutes at a high heat.
Transfer it to a heated serving dish and keep it hot.
Quickly fry the bamboo shoots and mushrooms for 1 minute at the same high heat.
Add the Ve-Tsin and stock and cook for 1 minute.
Blend the cornflour with the water, stir it in and boil for 1 1/2 minutes.
