Fillet Of Sole With Shrimp Recipe
Ingredients
4 large fillets of sole, or 6 smaller fillets (fresh or frozen, thawed)
Salt and pepper to taste
1/4 cup dry white table wine
2 1/2 cups hot water
2 tablespoons lemon juice
3 tablespoons each butter and flour
1/2 teaspoon Tabasco
1 tablespoon each minced green pepper and green onion
2 tablespoons minced fresh or dried chervil
1 cup shrimp, fresh or canned
Salt to taste
1 cup buttered soft bread crumbs
Directions
Sprinkle the fillets with salt and pepper and marinate several hours in white wine.
Transfer to a frying pan, cover with the hot water and lemon juice, and simmer 10 minutes.
Lift fish to a buttered baking dish.
Cream the butter and flour together and add to the liquid remaining in pan.
Add all the remaining seasonings, shrimp, and salt to taste.
Cook, stirring, until thickened.
Strew half the crumbs over the fish, cover with the sauce, and sprinkle with the rest of crumbs.
Bake in a moderate oven (350°) about 15 minutes; then set under broiler, if needed, to brown top.
Garnish with lemon wedges and chervil or parsley
