 4 fillets of mackerel
 Flour2 Tablespoon
 Salt1 Teaspoon
 Ground black pepper1/2 Teaspoon
 3 tablespoons special margarine
 Mushrooms1/4 Cup (16 tbs), chopped
 Onions1/2 Cup (16 tbs), chopped
 Garlic1 Clove (5gm), minced
 Wine vinegar1 Tablespoon
 Parsley2 Tablespoon, minced

Directions

Wash and dry the fish.
Rub with a mixture of the flour, 1/2 teaspoon salt and 1/4 teaspoon pepper.
Melt 2 tablespoons margarine in a skillet.
Fry the fish until browned and crisp.
Prepare the vegetables while the fish is frying.
Melt the remaining margarine in a skillet; saute the mushrooms, onions and garlic 10 minutes.
Add the vinegar and remaining salt and pepper.
Cook 1 minute.
Arrange the fish on a platter and pour the vegetables over it.
Sprinkle with the, parsley.
