Filled Fish Recipe
Ingredients
| Fish | 3 pound | |
| Onions | 2 | |
| '1/4cup cracker or bread crumbs | ||
| 1 egg, slightly beaten | ||
| Salt | 1 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Water | 1 Cup (16 tbs) | |
| Celery | 1/4 Cup (16 tbs), minced | |
Directions
Remove skin from fish all in one piece, starting at backbone.
Remove bones from fish and grind flesh.
Grind onions, combine 1/3 of onions with fish and grind again.
Add crumbs to fish with egg, salt, pepper and water.
Mix until smooth.
Wash fish skin, fill with mixture and sew or skewer together.
Place in kettle, add celery and remaining onion.
Cover with boiling water and boil for 5 minutes, then simmer about 1 hour, adding water if necessary to prevent fish from burning.
Serves 4.
