Filet Of Sole Recipe
Ingredients
| 4 filets from small flounder or sole | ||
| 5 onion, sliced thin | ||
| Shallot | 1 , minced | |
| White wine | 1 Cup (16 tbs) | |
| Cream | 1 Cup (16 tbs) | |
| Butter | 1 Tablespoon | |
| 1 T. Hollandaise sauce | ||
| 6 mushrooms, sliced thin | ||
Directions
GETTING READY
1. In a large pan, place the fish fillets
2. Pour over the wine, onions, shallot, and mushrooms
3. Cook on low for 10 minutes
4. Remove fish and set aside till required
MAKING
5. In a separate dish, mix the hollandaise sauce, the wine, cream, the wine sauce of the fish, and butter
6. Simmer the sauce for 6 minutes or till well mixed
FINALIZING
7. Place the fish in an ovenproof dish.
8. Pour the sauce over the fish
9. Broil the fish and the sauce till well done
SERVING
10. Serve hot immediately with parsley and sour cream dotted on top
