Cooking spray
 
1 tbsp butter
 
2 filet mignon
 
Salt and pepper to taste
 
2 potatoes, quartered
 
1 c boiling water
 
1/2 c tbsp raisins
 
8-10 pearl onions
 
1 tbsp sugar
 
2 tbsp red wine vinegar
 
3 tbsp water
 
1/4 tsp salt and pepper
 
1/2 c skim milk
 
1 tbsp sour cream
 
Sauce
 
2 shallot, chopped
 
1 tbsp red wine vinegar
 
2 tbsp low sodium soy sauce
 
1 c beef broth
 
1 c red wine
 
2 tbsp pine nuts

Directions

1. Spray oilve oil and add butter in a pan.
2. Preheat oven at 375 F.
3. Rub some salt and pepper to filet ad cook it.
4. Bake the filets in oven for 10 minutes.
5. Put the potaotes in boiling water until soft enough to mash them.
6. Soak raisins in hot water.
7. Make perforations in the onions and blanch them for two minutes.
8. Peel the skin. Add them to a saute pan with butter.
9. Add vinegar, water, sugar, salt and pepper and let them simmer for 30 minutes.
10. Stir every 10 minutes.
11. Add pine nuts and raisins to the onions.
12. Mash the potatoes, add skim milk, sour cream, salt and pepper.
13. Add shallots, red wine vinegar, soy sauce and stir.
14. Add salt and pepper, red wine and beef broth.
15. Reduce the sauce.
Serve the filet mignon with mashed potatoes, and sauteed onions.
