Filet Mignon Brochettes Recipe
Ingredients
8 1 oz beef cubes
4 bacon slices, halved
2 tsp butter
8 shallots, chopped
2 cups cooked rice
Garlic salt, to taste
1 tbsp soy sauce
1 large sausage, cut into 8 rounds
2 onions, quartered
8 cherry tomatoes
3 tbsp peanut oil
Directions
Wrap each beef cube with a half slice bacon.
Set aside.
In a skillet, melt butter.
Cook shallots 30 seconds until tender but not browned.
Mix in cooked rice, garlic salt and soy sauce.
Keep warm.
Thread a beef cube, a sausage round, an onion quarter and a cherry tomato onto each skewer.
In a large frying pan, heat oil.
Cook brochettes all over until meat is tender.
Spoon a bed of rice over 4 plates.
Place 2 brochettes on each.
Set aside.
