Filbert Butter Balls Recipe

Ingredients
1/4 pound sweet butter
1/4 cup sugar
1 egg yolk (from a medium-size egg)
1 tablespoon white rum or lemon juice
1/2 teaspoon vanilla
1 cup sifted all-purpose flour
1 egg white
1/2 cup finely chopped filberts (hazelnuts)
Red and green candied cherries, cut in quarters
Directions
Cream the butter with the sugar until fluffy.
Add the egg yolk, rum, and vanilla; blend well.
Stir in the flour.
Cover the bowl and refrigerate 3 to 4 hours, or overnight.
Roll into small balls, using about 1/4 rounded tea-spoonful for each.
Beat the egg white slightly in a saucer.
Roll the balls through the egg white, coating just the middle; then roll through the filberts in the same manner.
Place 1 inch apart (uncoated-side down) on a lightly greased cookie sheet, and press a quarter of a cherry into the top.
Bake in a 325° oven for 10 to 12 minutes.
